Eataly is bringing the sea to Chicago with SABBIA, a summertime pop-up restaurant inspired by the Italian seaside. Opening on Friday, June 22, SABBIA will offer Chicagoans the opportunity to escape the hot pavement and busy beaches to Italy’s coastline with a menu that celebrates both land and sea.
Located on the second floor of Eataly Chicago, the restaurant will take over the restaurant spaces currently occupied by La Piazza and Il Pesce. The menu will include dishes reminiscent of the Italian coast including meat, fish, coastal pasta options, bruschette, a Caprese Bar, and an oyster boat. Dishes will be lively, light, and sharable, featuring a full menu of spiedini, or “skewers,” including Zucchine (grilled and marinated zucchini, agrodolce onions, cherry tomatoes, chili flake).
Other expected highlights include the Pasta Nero allo Scoglio (housemade squid ink pasta, shrimp, clams, calamari, white wine tomato), along with Pansotti alla Genovese (house-made spinach and ricotta filled pasta, walnut pesto, Parmigiano Reggiano DOP).
The coastal fare can be paired with house-made craft beers, regional Italian wines, summer-inspired cocktails, and an all-new wine menu featuring more than 100 Italian rosés by the glass. SABBIA will also offer beachy happy hours with live music and lunch specials.
For those wanting a first look at the new space, Eataly will host ‘Summer Sippers’ at SABBIA, a ticketed event from 6 to 10 p.m. on Thursday, June 21. Tickets include four drink tickets (e.g. Aperol Spritz, frozen drinks, rosé, and more) and the first taste of SABBIA with exclusive access to a bar of summer-ready bites. Reservations for tables and cabanas in SABBIA will open for the entire season on Friday, June 8.
