Limited Time Only Barbecue Korean Wicker Park

On the one-year anniversary of his debut cookbook's release and the eve of the James Beard Media Awards for which its nominated for the 2019 Book Award: Single Subject, Chef Bill Kim will offer four recipes from Korean BBQ: Master Your Grill in Seven Sauces for the first time at urbanbelly, 1542 N. Damen Ave, for two nights only, April 17 and 18. 

Kim will serve up four recipes from the cookbook, including:

  • Korican-Style Baby Back Ribs - an ode to Kim's Korean heritage and his wife Yvonne's Puerto Rican heritage, "Korican" melds flavors from both in one of Kim's "master sauces" in the cookbook. These ribs have a generous helping of the sauce and are slow-grilled to fall off the bone. 
  • BBQ Spiced Chicken Thighs with Yogurt Nuoc Cham Sauce - the sugar in Kim's BBQ spice rub gives this chicken caramelized edges, along with a kick from gochujang and Lemongrass Chili Sauce - another one of the cookbook's master sauces. 
  • Korean BBQ Short Ribs - the cookbook's namesake master sauce shines here, with its sweet and sharp combinations of ingredients such as Asian pear, kiwi, brown sugar, garlic, onion and soy sauce. 
  • Korean Elotes - inspired by the Mexican street dish, Kim's grilled corn is then dipped in a seasoned butter with "Magic Paste" and hot horseradish. 

All four recipes will be available as specials for purchase a la carte, dine-in or take-out. Chef Kim will be on-site both evenings to chat with guests and sign cookbooks, which will also be available for purchase. Korean BBQ: Master Your Grill In Seven Sauces is written by Kim and Chandra Ram, published by Ten Speed Press.
