James Beard Award Winning Chef/Partner Tony Mantuano is known for serving locals and visitors alike his signature 'leopard-spotted' pizza, made with Bar Toma's award winning pizza dough and finished in their wood burning oven.
"We've studied and practiced a lot and I truly believe we have perfected the dough to make our pizza crust – it's our lifeblood at Bar Toma," explains Chef Tony. "We have imported a dough mixer from Italy that's specially designed to mimic human hands. We also let the dough rise for 48 hours and that long fermentation results in dough that's light, fluffy and perfectly chewy.
And with dough that perfect, why limit it to pizza? Bar Toma is excited to announce that after launching a social media contest to name the new pizza dough sandwiches, the Tony Calzony is now available in three mouthwatering combinations ($11 each):
Meatball Tony Calzony Nonna's meatballs, marinara, pecorino Romano
Chicken Parm Tony Calzony Grilled chicken breast, mozzarella, provolone, Grana Padano, marinara, garlic breadcrumbs
